3 Kids Dinner Recipes – Chicken

Making delicious and healthy meals for kids is a mom’s top priority. Sometimes, it’s also very hard to do, especially if you have a picky eater on your hands – just wants pasta, should always have potatoes in the meal, etc. But with most children, you can never go wrong with chicken.
As proof, here are 3 simple and easy to make chicken recipes that your child will surely love – whether he is a certified chicken lover or not:

Parmesan Chicken

Ingredients:

½ cup of Dijon Mustard
¼ cup apple juice
2 cloves of minced garlic
2 tablespoons of melted butter
2 cups of soft breadcrumbs
¾ cup grated Parmesan cheese
¼ cup ground almonds
another batch of butter (3 tablespoons of it)
½ teaspoon of salt
1/8 teaspoon of pepper
1 teaspoon dried basil leaves
8 boneless and skinless chicken breast halves.

Procedure:

  1. Preheat oven to 375 degrees. Line a baking pan with foil and put in a wire rack.

  2. Mix mustard, apple juice, garlic and 2 tablespoons of butter in a pan.

  3. In a big plastic Ziploc bag, mix and shake the breadcrumbs, Parmesan cheese, almonds, 3 tablespoons of melted butter, salt, pepper and dried basil.

  4. Coat chicken halves in the mustard mix, then put in the Ziploc bag and shake until thoroughly coated.

  5. Put chicken on the rack, and bake for 25 to 30 minutes, or until it is golden brown and thoroughly cooked.

Chicken on a Stick

Ingredients:

4 boneless and skinless chicken breast halves
salt and pepper
3 tablespoons peanut or vegetable oil
2 tablespoons barbecue sauce
1 ¼ cups of plain dried breadcrumbs
skewers

Procedure:

  1. Cut each chicken breast lengthwise into ½ inch strips; sprinkle with salt and pepper. Skewer.

  2. Prepare a charcoal fire or a grill and preheat for about 10 to 15 minutes.

  3. In a small bowl, mix the oil and the barbecue sauce.

  4. Brush the sauce over the chicken strips and roll them in the breadcrumbs.

  5. Grill the chicken skewers for approximately 3 to 5 minutes until well done. Serve with whatever dipping sauce your child likes – catsup, mustard, etc.

Bacon Chicken

Ingredients:

6 slices of bacon
1 tablespoon of butter
1 tablespoon of olive oil
6 boneless and skinless chicken breast halves
1 chopped onion
3 minced cloves of garlic
½ teaspoon of salt
1/8 teaspoon of pepper
1 ½ cups of shredded Cheddar cheese.

Procedure:

  1. Cook bacon until crisp. Crumble and set aside.

  2. Pour out bacon grease from skillet, and using some of the leftover oil, add the butter and olive oil.

  3. Sauté chicken breasts until cooked.

  4. Put chicken in ungreased baking dish.

  5. Cook onion and garlic in the same skillet. Stir in salt, pepper and bacon.

  6. Spoon bacon mix over chicken breasts and sprinkle with Cheddar cheese. Bake at 350 degrees for 10 to 15 minutes until cheese melts.

Chicken is healthy (especially without the skin), and using the recipes mentioned, your child will definitely have a blast in trying these recipes.
