Cooking Healthy for Kids – The Wonderful World of Eggs

The egg is probably one of the most loved comfort foods for both young and old alike. Its a popular food that provides for the health and nutrition for young children. And while it continues to do so, concerns about too much egg consumption leading to high blood pressure and cholesterol levels have also worried a lot of parents.

Taken in moderation, there should be no reason why eggs should be taken out of a healthy diet for kids. Here are some reasons why eggs are a wonderful source of nutrition, especially for young children:

  • Eggs are a good source of high quality protein.

  • In one study, they found out that eating eggs every day lowers the risk of getting cataracts in old age and prevents macular degeneration. This is due to the egg’s carotenoid content – lutein and zeaxanthin.

  • An egg is said to contain about 6 grams of high-quality protein and 9 essential amino acids.

  • A study showed that eggs help prevent stroke, heart attacks and blood clots (which can lead to aneurysm). The more egg yolks eaten, the more clots can be prevented.

  • Eggs contain choline, an important substance that regulates and boosts brain health, the nervous system and circulatory system functions. This nutrient also makes sure that we don’t have a folic acid deficiency.

  • Eggs have vitamin D.

  • People with B12 deficiency may eat eggs to help keep their hair and nails healthy.

I should also add that another advantage that the unassuming egg possesses is that it’s not hard to get children to eat eggs. Here’s a recipe my mom gave me that I’d like to share with you:

Deviled Egg Patties

Ingredients:

6 hard cooked eggs
1 tablespoon of prepared mustard
6 tablespoons of mayonnaise or salad dressing (but my kids prefer mayonnaise)
½ cup of packaged seasoned bread crumbs
¼ cup of vegetable oil
1 cup of shredded Cheddar cheese.

Procedure:

  • Mash eggs with a fork while they are still warm.

  • Stir in mayonnaise, bread crumbs and mustard.

  • Heat oil. Drop egg mixture in 8 mounds, much like a hamburger patty. Fry until golden on one side, turn over and do the same to the other side.

  • Put patties on serving dish and sprinkle with Cheddar cheese. Heat in broiler until the cheese melts. (Note: You can also add 2 tablespoons of chopped peanuts to the patty mixture if you wish. This gives added texture to your patties.)

  • Makes 4 servings or 8 patties.
