Healthy Children Recipes – Quiches Made Easy

We usually want what’s best for our children, but when it comes to children’s healthy food, parents need to be creative in order to get them to eat. Not to generalize, but kids are innately picky eaters. Case in point: My aunt said long ago that my cousins were the sole source of her unending migraines – they hated their packed lunches (usually stuffed with greens), traded their baloney sandwiches for something else their classmates had (thank God they didn’t turn out to be bullies!) and usually made up excuses not to eat anything else that isn’t roasted.
The solution to this age-old problem lies in the cook’s ability to present the food in a way that appeals to and holds the curiosity of the child. It sounds simple, but in reality, it’s hard to do – that’s why I understand why my aunt had headaches.

Which is why, I have 2 recipes for easy, delicious, nutritious and interesting quiches. Sure, they take some time to prepare, but when I first made these, I had my children all ready to do my every whim. I call them miracle quiches because my children behave like proper angels – not giving me the headache my aunt usually had back then.

Zucchini Quiche

Tip: Don’t tell them what it is at first. Let them find out on their own. They’ll be surprised that they love it anyway!

Ingredients:

For the short crust pastry
2 cups plain flour
a pinch of salt
4 ounces cold butter (or mixture of butter and lard)
1/3 cup of cold water
For the filling
625 grams/1 ¼ lb of zucchini
4 cloves of garlic
3 tablespoons sunflower or corn oil
4 eggs
3 ½ ounces of grated Cheddar cheese
1 1/2 tablespoons of snipped fresh chives
1 ounce of plain flour
a cup of milk
salt and pepper

Procedure:

For the short crust pastry

  1. Sift flour and salt.

  2. Cut in butter until the flour/salt/butter mix looks like breadcrumbs.

  3. Add water and mix to dough. Knead until smooth; shape into a ball.

  4.  Cover with plastic wrap and chill for an hour.

  5. On a lightly floured surface, roll out pastry into circles.

  6. Line a 25 cm/10in greased fluted flan tin or dish. Trim top. Chill for 15 minutes.

  7. Preheat oven to 450 degrees Fahrenheit. After chilling, prick with a fork.

For the filling

  1. Cut zucchini into 1 ¼ in thick slices.

  2. Peel and julienne (cut into very thin strips) garlic.

  3. Heat oil in frying pan; sauté. Stir in zucchini. Season with salt.

  4. Put sautéed garlic and zucchini on pastry; sprinkle with cheese and chives.

  5. Separate 1 egg; brush a little egg white over the fork holes.

  6. In a small bowl, mix flour with a little milk and mix until smooth.

  7. Stir in remaining milk and eggs. Season with salt. Pour on quiche filling.

  8. Bake for 25 to 30 minutes or until just set and/or golden brown.

Ham Quiche

This is perfect for those get-togethers at your house, when your child decides that he wants to be proud of you and “show-off” your cooking prowess. Also wonderful as a packed lunch.

Ingredients:

For short crust pastry – follow pastry recipe from the zucchini recipe.
For the filling
7 ounces lean ham
2 eggs
3 ounces of grated Gouda or Cheddar cheese
2/3 cup of whipping cream
a tablespoon of snipped fresh chives (and a little extra for garnishing)
salt and pepper

Procedure:

Follow pastry procedure for zucchini quiche.
For the filling

  1. Coarsely chop ham.

  2. Preheat oven to 450 degrees Fahrenheit. Prick pastry base with fork and fill with ham and cheese.

  3. In a separate bowl, whisk eggs and cream. Stir in chives and season with salt and pepper.

  4. Pour over filling and bake for 25 to 30 minutes or until just set and golden brown.

  5. Garnish with snipped fresh chives.
