Healthy Kids Meals – Chicken and Rice

My children love chicken, especially my youngest who loves to include rice in her daily diet. For her, chicken and rice are the best kids recipes ever known to man – or well, for a kid like her. Though I can’t provide her that everyday, I make sure that at least once a week, I give her what she wants. After all, chicken and rice are 2 indisputably healthy foods, and I wouldn’t want my child to think otherwise.

After much experimentation (and yes, with some but rare botched up experiments), we’ve come up with this one-dish meal recipe (handed down to me by a cousin) with a few minor modifications to the original:

Ingredients:

  • 2 tablespoons of olive or vegetable oil (preferably olive as it is healthier)

  • 1 tablespoon of butter

  • 1 chopped onion

  • 4 boneless and skinless chicken breasts

  • 1 and a half cups of water

  • 8 oz. packaged mushrooms, sliced

  • Some chopped broccoli

  • Half a cup of sour cream

  • Half a cup of grated Parmesan cheese

  • 6 oz. package of long grain wild rice mix (but we use just plain white rice and it works just fine; use to your discretion)

Procedure:

  • Heat oil and butter; sauté onions.

  • Add chicken, and cook until browned on one side. Turn over and cook the other side.

  • Add mushrooms while cooking the other side of the chicken.

  • Remove chicken from pan.

  • Add water. (I usually put a few pinches of salt in the water to taste.)

  • Add rice to the mushrooms.

  • Place the chicken at the edge of the skillet. Put the broccoli florets at the center.

  • Cook over medium heat until the mixture boils. Reduce heat, cover and cook for another 10 minutes. Stir to mix broccoli with the rice.

  • Add sour cream and heat for about a minute but not more.

  • Sprinkle with cheese and cover. Let stand for a few minutes to melt the cheese and then serve.
