Healthy Kids Meals: Croquettes
Croquettes
These yummy finger foods are great to eat and can be made in healthy variations with the help of older children! While deep frying is not the healthiest way of cooking, the quality of the oil you use can help, and so does draining or patting the oil away. You can use mashed squash as an alternative to mashed potatoes for a different twist!
Serves Four to Six
Ingredients:
10 medium sized Potatoes
3 tablespoons Butter
1 cup Turkey Ham/ Turkey Bacon (cut in bite size chunks)
1 cup Canned Tuna (cut in bite size chunks)
1 cup of Low Fat Cheddar Cheese (cut in bite size chunks)
Milk
Flour
Squash (optional)
2 Eggs
Bread Crumbs
Olive Oil
Instructions:

Bring a pot of water to a boil. While it is boiling, peel the potatoes and cut them into small squares. Place the potatoes into the boiling water and wait until they are soft and cooked.

In a large bowl, mash the cooked potatoes with 1 tablespoon of butter and ¼ cup of milk. Make sure the mixture is evenly mixed. Set aside.

In a small pan, heat about 2 tablespoons of butter, making sure it doesn't burn or turn brown. When it's melted put in 1 tablespoon of flour, and whisk. You are looking for a pasty like consistency. Add more flour slowly if needed.

Add 200ml of milk to the pan, whisking in the milk so it blends well with the flour and butter paste. Continue adding milk, making sure each batch is properly mixed in before each addition. Your goal is a shiny cream sauce. Set aside

Crack the two eggs and whisk them in a bowl.

Take a bit of ham, roll it in the white sauce.

Take some of the mashed potatoes and wrap this around the ham chunk till the ham is completely covered by the mashed potatoes, like a tiny ball.

Roll this mashed potato ball in the bread crumbs, then dip it quickly in egg before rolling it in some more bread crumbs. Set aside.

Continue the process for all your ham chunks, tuna chunks, and cheese chunks.

When you have your pile of little potato balls, take a large plan and fill it with about half an inch of olive oil. Heat the oil. Once the oil is hot enough, put in your croquettes and let them fry till golden brown. Make sure to drain the oil or pat the croquettes with paper towels before eating.
