Healthy Kids Meals: Oatmeal Cookies


Oatmeal Cookies

            Oatmeal cookies make a great healthy snack for your children. The oats provide great fiber, and is a good source of grain. This recipe adds some chocolate chips to the cookies for some extra sweetness. Ask your children to help you measure out the ingredients, and to help you mix or stir the cookie batter.

Ingredients:

2 cups of oats
3 eggs
1 cup of chocolate chips
1 cup of unsalted butter
2 cups brown sugar
½ tsp. Salt
1 tsp. Cinnamon
2 tsp. Baking soda
2 ½ cups all purpose flour

Instructions:

  1. Beat the eggs and mix in the cup of chocolate chips. Place it in the refrigerator.

  2. Preheat the oven to 175 degrees.

  3. Soften the butter in the microwave.

  4. Mix the softened butter and brown sugar together in a large mixing bowl, allowing as much of the brown sugar to dissolve.

  5. Slowly add salt, cinnamon, baking soda, and flour into the mixing bowl making sure the mixture is even.

  6. Once the mixture is even, add the egg and chocolate chip mixture, once again mixing till even.

  7. Put in the oats and mix well. By now you will have a sticky, dough like consistency.

  8. Place tablespoon sized dollops onto a baking sheet, making sure you separate each dollop by two and a half inches.

  9. Bake in the oven for around 10 minutes, or until the cookies turn golden at the edges.

There are many variations to this popular afternoon snack or dessert. You can add other ingredients to replace chocolate chips like nuts or dried fruit!
