Healthy Kids Meals: Pancake Shapes and Banana Blankets


Pancake Shapes and Banana Blankets

            This recipe is classic, easy, and fun. It's a great one to start with when cooking with your younger children! The different pancake shapes will be fun for your children to eat, and banana blankets are a great all around breakfast!

Ingredients:

Pancake Mix
Cookie Cutters in many shapes
Kitchen Tongs
Eggs
Milk
Butter
Bananas
Peanut Butter

Instructions:

1. Create your pancake batter using the pancake mix, eggs, milk, and butter. Most pancake mixes come with instructions as to how many eggs, milk, and butter you will need. Follow these instructions for making the batter. You can ask your children to help you mix the batter.

2. Heat a large pan. Place some cookie cutters down on the pan and drop in some of the pancake batter. Wait for the pancake batter begin to cook on the edges before lifting the cookie cutters out with the kitchen tongs. After you lift the cookie cutter away, flip the pancake so the other side cooks as well.

Note: If you aren't comfortable placing the cookie cutters down on the hot pan, you can cook your pancakes the old fashioned way first and then cut them with the cookie cutters later. Make as many shapes as you can. If your children want to try and cut them, make sure they are capable or assist them in the cutting process.

3. To make the banana blankets, leave some regularly shaped, round pancakes out of the cookie cutter's reach. Or create rectangular pancakes.

4. Spread some peanut butter onto the round or rectangular pancake. Wrap a fully peeled banana into it's pancake-peanut butter blanket. Eat like a pancake burrito!

Pancakes with shapes are fun to eat, and they provide grains, dairy, and protein for your child. Banana blankets provide the same, but with a serving of fruit as well! This dish is a great breakfast for both children and adults. If you're going to be serving only pancake shapes, be sure to add a fruit bowl to your child's breakfast for a more well balanced meal!
