Healthy Kids Meals- Pumpkin Soup
Pumpkin Soup
This healthy soup is really yummy, and makes a great start to either lunch or dinner. Ask your children to help you measure out ingredients, and to help you stir. If your child is older, they can help you with the food processor.
Serves Six
Ingredients:
4 cups of mashed cooked pumpkin
1 cup of 2% milk
6 cups of chicken stock
1 onion (chopped)
½ tsp. Nutmeg
½ tsp. Pepper
2 tsp. Salt
6 tablespoons of butter
Instructions:

Heat the butter in a large saucepan, making sure it doesn't brown or burn. Add the nutmeg, pepper, salt, and milk, stirring to make an even mixture.

Reduce the flame and put in the chopped onion. Allow to simmer.

Once it's simmering, place the heated mixture aside, ready to pour into the food processor.

Put the mashed pumpkin into a food processor. Slowly mix in the heated mixture into the food processor. Mix the pumpkin and the liquid till you get an even texture.

Place this mixture into a pot, slowly allowing it to heat up again. After about two minutes, add half of the chicken stock, mixing it all well.

Allow the soup to simmer before adding the rest of the chicken stock.

Once the soup is evenly mixed and is simmering, it is ready to serve.
If you don't like the taste of nutmeg, substitute it with cinnamon. You can use this same recipe with squash to make squash soup. You can also add a teaspoon of vanilla extract for some extra flavor to your soup. Be creative when presenting this soup to your children. Call it Halloween Soup or something like that. The creative name will distract them from realizing it's a vegetable soup! Serve with toasted whole wheat bread and enjoy!
