Baked Salmon

This kid friendly recipe is something adults will love to eat too. It’s a great healthy main dish, and is a good alternative during the holidays!

Ingredients:

1 large salmon fillet
1 pack of fresh dill
1/3 tsp. salt
Freshly ground black pepper
2 tbsp. olive oil
1 kg of spinach
½ cup of white wine
1 lemon
3 tbsp. mayonnaise
1 tbsp. Dijon mustard

Instructions:

1. Pre-heat your oven to 375 degrees

2. Place a large piece of aluminum foil (enough to wrap the salmon) on a large baking pan.

3. Chop a handful of dill and set aside

4. Take the salmon fillet and put it on a separate baking pan (this is just for the preparation process). Drizzle 1 tbsp. of olive oil on one side, spreading it with the spoon so the entire side is lightly covered in oil. Do the same to the other side with the last tbsp. of olive oil.

5. Next rub the salt and freshly ground black pepper on both sides of the salmon. After this is done, rub the chopped dill on both sides as well.

6. Create a bed on the aluminum foil with spinach leaves. You may use as many leaves as you want. Then carefully place the marinated salmon at the center of the spinach bed.

7. Squeeze some fresh lemon juice on top of the salmon.

8. Lift the sides of the aluminum foil like you’re creating a bowl. This is to ensure nothing spills out. Pour the half cup of white wine on top of the salmon then seal the aluminum foil on top and twisting the sides like a candy wrapper.

9. Place the salmon in your oven and allow it to cook for thirty to forty minutes.

10. While cooking, take another handful of dill and give this a rough chop. Stir this into the tbsp. of Dijon mustard and the three tbsp. of mayonnaise. When you create a smooth and even consistency, place this sauce in the refrigerator.

11. When your salmon is finished cooking, carefully remove it from the aluminum foil and into a serving dish. You may pour the juices that remain in the foil on top of the salmon or place it in a bowl on the side.

12. Serve your salmon and remember to take your dill mustard sauce out of the refrigerator to serve on the side.

This dish can be done with other filleted fish as well. It fulfills the protein and vegetable servings of a delicious meal! Serve with ½ cup of brown rice as your grain. For dessert, have some mixed fruit with cream on top to meet your fruit and dairy needs!
