Easy Recipes Kids Can Make

Gone are the days when kids just passively wait for their food to come to them. The kids of this generation now believe that they can contribute to making quick and easy healthy snack recipes. Unfortunately, mothers like us sometimes forget that kids need to be able to help out in the kitchen too to prepare them for their future “flying off the coop”, so to speak.

Here, we are going to have recipes that will make mom and child bond, because you will be making these with your child. Don’t worry, you only need to oversee and help out every once in a while, especially when it comes to boiling and cooking (since he or she maybe trying to help out for the first time). Plus, these recipes have been tried-and-tested – maybe not by my kitchen, but friends and relatives who had timeless recipes that spanned generations already. (Most of these recipes are probably older than you or me.)

Easy Egg Sandwich

1. Hard-boil 10 eggs, for about 8 to 10 minutes. Take the pan off the stove and run cold water on them for about 2 minutes to stop the cooking process.
2. Crack and peel eggs. (Better yet, have your child do that.)
3. Slice and chop the eggs, and put them in a mixing bowl. Add salt and pepper to taste, with a sprinkling of paprika, and some mustard. Sprinkle some ground cloves on top before adding mayonaise. Then, mix.

You can make adjustments on this recipe depending on what you and your child want – he may feel like having more of the egg than the mayo, so just little of it would do. Or he may want lots of mayo, so that’s what you give him. You make this into a sandwich spread or alternatively, you can use this as a dip too!

Vanilla Orange Cookies.

1. Combine 12 ounces of vanilla wafer cookies with ½ cup of almonds and ½ cup of coconut.
2. Process in a food processor until fine crumbs appear.
3. Add ½ cup of powdered sugar; mix/process until blended. (Alternatively, you can pour the mixture in a bowl and then add the sugar.)
4. In a different bowl, combine 1 cup of white chocolate chips and a tablespoon of butter. Microwave for about a minute or less, then stir.
5. Microwave and mix again until the mixture is smooth and blended.
6. Stir the white chocolate mix into the wafer mix with ¼ cup of orange juice, ¼ cup of orange marmalade and 2 tablespoons of corn syrup.  Stir.
7. Form into 1” balls and coat with sugar or dessicated coconut. Let stand until firm.

This batch makes about 48 cookies, so if you feel it’s too much, just cut all the ingredients in half.

Banana Balls

1. Mix 3 tablespoons of peanut butter, 3 tablespoons of jelly and 3 tablespoons of marshmallow fluff in a small bowl.
2. Chop up about 2 or 3 bananas and add them to the mixture. Shape into balls and freeze for at least 5 hours.

Chocolate raisins

1. Melt about 6 ounces of chocolate chips and ½ cup of crunchy peanut butter in a saucepan over low heat, and stir constantly.
2. Add ½ cup of raisins and about 2 and ½ cups of miniature marshmallows.
3. Pour onto a cake pan lined with wax paper and refrigerate overnight.
4. Cut into squares and serve with milk.

Apricot balls

1. Simmer 9 ounces of dried apricots and have it juice out in a saucepan for about 10 to 15 minutes. This is until apricots are soft and the juice is already thickened. Set aside.
2. Crush a cup of whole wheat cereal in a food processor.
3. Add the apricots, juice and ¼ cup of honey and process until thoroughly mixed.
4. Make into bite-sized balls.
5. Coat balls in shredded coconut. Refrigerate then serve.

The whole wheat is good for the digestive system, as it is fibrous and eliminates toxins from the body. Plus, apricots are a good source of vitamins and nutrients.

Your child’s love of cooking and eating healthy food may start here. Give him the liberty to use your kitchen from time to time (of course, when he or she is old enough to handle a knife and boil his own water), and you may be surprised that he may know more of eating healthy that you do.
