Healthy Lunches for Kids:
Cheesy Chicken Quesadillas with Guacamole

A fun Mexican treat turned healthy, which children will surely enjoy because of its taste. This quick to put together snack easily becomes a meal for your child with the addition of chicken.
(serves 3- 4)

Ingredients:

Quesadillas

4 whole wheat flour tortillas
1 chicken breast pre-grilled and cut up or shredded  (shrimps, ham and other seafood and meat may be substituted)
½ cup thinly sliced mushrooms
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese

Guacamole

1 ripe avocado halved and scooped out from skin
1 red pepper minced
1/8 cup fresh lemon juice
1 small onion minced
¼ cup chopped cilantro
Dash of Worcestershire sauce
Salt & pepper to taste

Instructions:

Quesadillas

1. Mix the mozzarella cheese and cheddar cheese in a bowl.

2. Lay out two of the whole wheat flour tortillas. Put half the cheese mixture on the base, making sure to spread it out evenly.

3. Add your chicken and ,mushrooms on top spreading it evenly as well.

4. Add the remaining cheese mixture to the top and cover each one with the remaining tortillas.

5. Press each quesadilla to help seal it and avoid having the contents spill out.

6. In a non-stick frying pan cook the quesadillas over medium heat for about 1 ½ -3 minutes on each side.

7. After taking your quesadillas off the heat, let them cool and slice it into quarters.

Guacamole

1. Mash the Avocado which has been scooped out. If you want your guacamole to be chunky then do not mash this too finely.

2. Add the remaining ingredients except for the salt and pepper. Mix this thoroughly.

3. Slowly add salt and pepper to taste, then refrigerate for at least two hours before serving with quesadillas.

Each serving of  quesadillas and guacamole will give you child approximately one serving of grain, half a serving of dairy, one serving of protein and fruit as well. You don’t have to worry about fat content  either since both mozzarella and cheddar cheese have relatively low fat contents.
