Healthy Snack Recipes:
Fruit Juice Popsicles
This is a quick and easy to make snack. You can prepare them well in advance and always have them on hand. They’re great for warm days in the summer, and they’re healthy too!
Ingredients:
Your fruit of choice (Mangoes, Melon, Lychees or 100% fruit juice)
Popsicle holders/makers
Popsicle sticks
Instructions:
1. Take any of your fruits of choice. In this example we will use a mango (Asian mangoes are usually sweetest.)
2. Remove any seeds or skin from the fruit: Cut the mango and remove the center seed. Scoop away the flesh from the skin.
3. Put the mango (or fruit) in a blender or food processor and blend/puree till it becomes a smooth thick liquid.
4. Fill your popsicle holders/ makers with fruit juice and place them in the freezer.
5. Check on the status of your popsicles every half hour. If your popsicle maker is the kind that does not come with the attached plastic sticks, stick in your wooden or plastic popsicle sticks
6. After the popsicles are frozen solid, they are ready to eat!
An alternative to this recipe is using 100% fruit juice, which may give you more options and flavors that using real fruit. 100% fruit juice is healthier than concentrate. Remember to mix in a little sugar if the juice is not naturally sweet!
