Holiday Recipes:
Whole Wheat Vegetable Lasagna

This dish goes really well with any festive occasion. It’s healthy, good, and something familiar to most kids, which saves parents from the trouble of trying to coax children to eat unknown holiday dishes. It’s also a great side dish for the main course of the adults!
(Serves 12)

Ingredients:

2 heads of broccoli, chopped very finely
4 cups of chopped artichoke hearts
2 zucchinis, sliced
1 onion, chopped
4 cloves of garlic, minced
3 tbsp. olive oil
Salt and pepper to taste
1 can/ pack of low fat cream
Cheddar cheese for grating
Mozzarella Cheese for grating
1 ½ liters of tomato sauce
1 package of whole wheat lasagna noodles

Instructions:

1. Begin boiling a pot of water, enough to cook the lasagna noodles in. Cook the lasagna noodles till they are soft, but still a little hard to chew

2. Heat the oil in a large pan. Sauté the garlic, onions, broccoli, artichoke hearts, and zucchinis for about 8 minutes. Season with salt and pepper while cooking.  Set aside.

3. Pre-heat your oven to 375 degrees.

4. In your baking dish, arrange the lasagna noodles side by side, cover this layer of noodles with a layer of vegetables. Scoop some tomato sauce into the pan, just enough to cover the vegetables. Next, drizzle some cream over the sauce. Grate a generous amount of cheddar and mozzarella cheese over this then cover it with another layer of noodles and repeat the process.

5. The last layer of noodles should just have tomato sauce, cream, and cheese on top. All the vegetable filling should be in between the other layers.

6. Put your lasagna into the oven and bake for thirty-five to forty-five minutes, or until you can poke the lasagna with a barbecue stick and the stick goes in and out easily and relatively clean.

7. Allow to cool a little before serving.

Keep in mind that whole wheat pasta takes longer than regular pasta to cook.

This dish fulfills the grains, vegetables, and dairy servings of a meal. Try pairing it with a lean meat dish and a fruit themed dish for dessert for a truly well balanced and healthy holiday meal!
