Kid Dessert Recipes:
Frozen Mango Crumble Cake

This is an easy to make healthy dessert that the whole family will enjoy. It’s a great alternative to commercial ice creams, and is a wonderful treat on a hot day.

Ingredients:

4 ½ cups of fresh ripe mangoes (scooped)
6 cups sweetened yogurt
½ cup cream cheese
2 cups crushed graham crackers
1 stick of butter

Instructions:

1. Pre-heat your oven to 325 degrees

2. Melt the stick of butter. In a mixing bowl, put in the 2 cups of crushed graham crackers and the melted butter. Mix with an electric mixer until smooth.

3. Butter a Pyrex baking dish and place the mixture in the dish. Press down with a spatula so it’s even and firm. Put it in the oven for 10 minutes or until crust is set.

4. In another mixing bowl, mix in the cream cheese and six cups of yogurt. Mix with an electric mixer till smooth. Place this mixture on top of the crust and even out.

5. Arrange the mango scoops on top of the filling, making sure all parts of the cream cheese and yogurt mixture are covered.

6. Place in the freezer and serve when frozen.

Don’t limit yourself to mangoes! This recipe can be done with many other fruits like strawberries, blueberries, kiwis, and bananas. Each piece of this yummy cake provides servings from the fruit, dairy, and grains group.
