Kid Dinner Recipes:
Super Chicken Caesar
with Fancy Grilled Cheese
This recipe is easy to cook, very nutritious, and quick! Great for a dinner on the run! It’s another combination of what kids are familiar with (grilled cheese) and vegetables they see all the time.
(Serves 4)
Ingredients:
8 slices of whole wheat bread
Swiss Cheese
Cheddar Cheese
2 Grilled Boneless Chicken Breasts (sliced)
1 pack of iceberg lettuce
2-3 strips of bacon
6 anchovy fillets (canned in olive oil)
1 tbsp. cream
1 tbsp. Dijon mustard
½ tbsp. Grated parmesan cheese
Whole wheat croutons
Pepper
Instructions:
1. If you haven’t pre-grilled the chicken breasts, do this first. Season it with a bit of pepper and place it on a grill or grill pan about four or five minutes each side.
2. Fry the bacon strips till crispy and place on some clean paper towels to absorb the oil.
3. Take your anchovy fillets, 1 tbsp. cream, 1 tbsp. Dijon mustard and blend or place in the food processor. Make sure your substance is saucy but not to watery. You may add more cream if your children are not used to mustard. Put in some grated parmesan cheese, and mix up the sauce and place in the refrigerator.
4. If your chicken breasts are cooked by now, slice them up into bite sized pieces. After this, crush your bacon into tiny pieces.
5. Slice up some Swiss and Cheddar cheese according to how much the recommended serving size is on the package. Place these two kinds of cheese on a piece of wheat bread, sprinkling some pepper on the cheese before adding the other piece of wheat bread on top.
6. Place the sandwiches on a hot grill or in the toaster. Grill your sandwiches till the cheese melts, remembering to switch sides so you don’t burn the bread.
7. While your sandwiches are grilling, give your lettuce a good rinsing, and remove excess water with a strainer. Place it in a salad or mixing bowl and mix in the sauce and grilled chicken.
8. Serve each of your children some salad with chicken breasts, sprinkling a bit of bacon and a few whole wheat croutons on top. Put their grilled cheese sandwiches beside their salad.
If you’d prefer using other kinds of lettuce, you may do so. Feel free to mix up your salad greens. There’s a lot of great packaged salad these days that have a mix of two lettuce types and arugula, this is great with this recipe too!
Though it’s not the healthiest food in the world, it’s healthier for you to cook the bacon yourself than to buy the pre-packed bacon bits.
You don’t have to put too much cheese on the sandwich. If your children have already had some servings of dairy for the day, you can opt to only place enough cheese for the serving sizes they need to fulfill the recommended daily allowance. It’s up to you! You can also choose to use other kinds of cheese. Up to four different kinds is usually a good combination.
This dish gives each child about two and a half servings of grains, one serving of protein, a serving of vegetables, and about two servings of dairy. You can offer them some fruit for dessert or serve the meal with 100% fruit juice for a well balanced and complete meal!
