Kids Breakfast Recipes:
Granola and Fruit Bowl
A healthy alternative to the regular sugary coated cereals that your kids have for breakfast. The different textures and yummy taste will surely have your kids coming back for more!
(Serves 4)
Ingredients:
For Granola
1 cup uncooked rolled oats
½ cup oat bran
½ cup wheat germ
¼ cup honey
1 tsp. cinnamon (optional)
For Toppings
½ cup fresh strawberries
¼ cup fresh blueberries
¼ cup raisins
1/3 cup almond slivers
1 cup low fat yogurt
Instructions:
1. Start by preheating your oven to 350 ̊ F.
2. Combine the uncooked rolled oats, oat bran, wheat germ and honey in a large mixing bowl. Thoroughly mix these together so that all of the grains get an even coating of honey on them.
Note: If you decide to include cinnamon, then add it to this mixture as well
3. Take a baking sheet or shallow baking pan and spray it thinly with low fat cooking spray so that the granola does not stick to your pan.
4. Evenly spread the granola mixture onto your baking sheet or pan and put it into the oven for 30 minutes or until golden brown. You will want to take this out every five minutes or so and stir the mixture around so that it gets cooked evenly and becomes crunchy.
5. Once the granola is done, take it out of the oven and allow to cool.
6. Toss in the strawberries, blueberries and raisins. Mix everything being careful not to crush the fruits.
7. Top with two dollops of yogurt (about ¼ cup) and sprinkle with almond slivers on top.
This delicious crunchy breakfast recipe can be altered as much as you want in terms of the toppings that you put on it. Fresh fruit slices such as bananas, peaches and apples can all be used. You can also add a variety of nuts such as walnuts, pecans and even coconut shavings. Go ahead and use your imagination and you won’t run out of healthy toppings to put on it.
If you have the time and want to include your kids in the breakfast preparation, just lay out the toppings in small bowls and allow them to assemble their own granola and fruit bowls. This can make for a perfect week-end morning family bonding that will surely provide you with enough energy to jump start your day. Your kids get a serving each of grains, fruits, nuts and even some dairy.
Also, don’t forget that this can be a quick breakfast since you can always make your granola in advance. You can make several batches and store it in air tight containers for future use, making it just as convenient as the commercial varieties but with less sugar content. Fruits and nuts can also be prepared the night before and stored in containers in the refrigerator. That way you can just throw everything in together in the morning and you’re good to go with a healthy and delicious breakfast for kids.
