Kids Breakfast Recipes:
Spinach and Cheese Omelet

What’s breakfast without an omelet? Here’s a tasty recipe that will get your kids to eat green leafy vegetables without them even worrying about it.
(serves 4)

Ingredients:

4 large eggs
2 tablespoons low fat or skim milk
2 cups spinach leaves *washed and chopped
¼ cup Ricotta or cottage cheese
Pinch of salt

Note: Frozen and chopped may be substituted for fresh ones, but make sure that you thaw them out properly. Once thawed, you may want to squeeze out any excess water to avoid your omelet from getting runny.

Instructions:

1. Separate egg yolks from egg whites putting them in two separate bowls. Make sure that the bowl for your egg yolks is bigger.

2. Beat egg whites until it becomes frothy, white and forms soft peaks. Set aside.

3. Beat the egg yolks with the milk and salt, until it becomes light and fluffy and the color has lightened a bit.

4. Slowly fold in the egg whites into the egg yolk mixture, making sure not to stir in circular motions which will make the mixture flat. Cut and fold through both mixtures to retain the air and fluffiness.

5. Lightly spray a large non-stick pan and heat it on the stove over medium heat.

6. Pour the egg mixture into the pan and allow to cook until the base is set.

7. Add the spinach leaves one side of the omelet. On top of this, crumble your Ricotta or cottage cheese.

8. Fold the empty side over and turn your omelet to allow the other side to cook before taking it off the heat.

Kids will surely enjoy the cheese in this dish. The spinach becomes part of a delicious meal without them even noticing that they are eating greens. You can even add other fruits and vegetables to make this even more nutritious. Cherry tomatoes and mushrooms are both good partners for spinach and will taste good when added to your omelet.
